On 12 August 2025, Verysell AI participated in the agriculture conference on “Application of Science and Technology, Innovation, and Value Enhancement in Post-harvest Preservation and Processing of Agro-forestry-aquatic Food Products”, which was held by Hanoi Department of Agriculture & Environment and Vietnam National University of Agriculture. The event aimed to address science and tech innovations in post-harvest and food processing to boost product value, safety, and sustainable growth in agriculture.

Challenging Gaps in Food Processing
At the conference, officials from the Hanoi Department of Agriculture and Environment have reported the current situation of agriculture in Vietnam, challenges, and opportunities.
According to Ms Nguyen Thi Thu Hang, Head of the Processing Quality and Market Development Division at Hanoi Department of Agriculture and Environment, the city has 13,739 agricultural, forestry, and fishery production and trading establishments. Around 1,700 of these are processing facilities, 98.5% of which are small or medium-sized. Only about 30% of post-harvest products are processed locally, with most sold fresh or imported from elsewhere.
Mr Ta Van Tuong, Deputy Director of Hanoi Department of Agriculture and Environment, cited Resolution 57-NQ/TW on science, technology, and digital transformation, emphasising the goal of building clean, organic, and circular agriculture linked to processing and integration into global value chains.
He called for increased investment in advanced equipment such as irradiation, steam treatment, modified atmosphere packaging (MAP), cold storage, biotechnology, blockchain, and IoT to ensure hygiene, traceability, and safety.

AI Application in Post-harvest Preservation and Food Processing
Dr Toan Nguyen Huy, CTO of Verysell AI, joined this agriculture conference as a keynote speaker. AI improves safety by identifying hazards early and reducing risks, reduces waste through process optimization and shelf-life prediction, and boosts efficiency by automating tasks, lowering labor costs, and accelerating operations. Additionally, blockchain and tracking technologies enhance transparency, fostering consumer trust, while AI-driven data insights support better decision-making and guide effective quality-control strategies.
Challenges and Opportunities of AI Application in Agriculture
Dr. Toan also highlighted the challenges and opportunities of applying AI in post-harvest operations. He noted that implementing AI requires large volumes of high-quality data, significant investment in technology, and specialized expertise. Training and recruiting AI professionals is essential, and integrating AI into existing systems can be complex. He also emphasized the importance of developing explainable and reliable AI models, while staying aligned with evolving regulatory requirements.
Despite these challenges, Dr. Toan pointed out several promising opportunities. Advanced sensors and IoT devices enable precise monitoring of storage conditions, while machine learning supports complex quality predictions. AI-driven insights can provide personalized product information for consumers and help verify sustainable, ethical supply chains. His presentation underscored the potential of AI to enhance safety, efficiency, and transparency throughout the post-harvest process.
